What this trial studies
This is a cross-sectional observational study comparing adults who follow vegan, ovo-lacto-vegetarian, or omnivorous diets in Rosario, Argentina. Participants provide demographic and medical history and undergo dietary interviews, anthropometric measurements, body composition, blood pressure, grip strength, and blood tests for cardiometabolic biomarkers. People on medications that affect blood pressure, lipids, or glucose and those with major chronic diseases are excluded to reduce confounding. The goal is to compare diet characteristics and cardiometabolic risk profiles across the three diet groups.
Who should consider this trial
Good fit: Adults aged 18–65 who live in Rosario or nearby, have a BMI between 18.5 and 30, have followed a vegan, vegetarian, or omnivorous diet for at least one year, and do not have major chronic diseases or use excluded medications are ideal candidates.
Not a fit: People with acute or chronic diseases (including diabetes), pregnant or breastfeeding women, high-performance athletes, those on antihypertensives/lipid-lowering/hypoglycemic/glucocorticoid/anti-obesity drugs, or with dietary-altering allergies/intolerances are unlikely to benefit or be eligible.
Why it matters
Potential benefit: If successful, the results could clarify potential cardiometabolic benefits or risks associated with plant-based versus omnivorous diets in this local adult population.
How similar studies have performed: Prior observational studies in other populations have reported associations between plant-based diets and favorable cardiometabolic markers, but findings vary and randomized evidence remains limited.
Eligibility criteria

Inclusion Criteria: * Adults aged 18 to 65 years. * Residence in the city of Rosario or surrounding areas. * Without major diseases. * BMI \>18.5 and \<30. * Adherence to a vegan, vegetarian, or omnivorous diet for at least 1 consecutive year at the time of recruitment. Exclusion Criteria: * Acute or chronic diseases (cancer, infections, heart disease, or others), gastrointestinal disorders affecting diet, diabetes mellitus, chronic kidney or liver disease, or any other condition that could affect study outcomes. * Food allergies or intolerances that substantially affect the individual's usual diet. * Pregnant or breastfeeding women. * High-performance athletes (\>15 hours per week of high-intensity physical activity). * Use of medications that could affect study outcomes, including antihypertensives, lipid-lowering drugs, hypoglycemic agents, glucocorticoids, and anti-obesity drugs. Note: vitamin, mineral, or other dietary supplements are not exclusion criteria. * Problematic use of alcohol or other drugs. * Simultaneous participation in another clinical trial. * Inability (physical or psychological) to perform the procedures required by this study. * Blood transfusions within the last 3 months.
