What this trial studies
This study aims to encourage a plant-based diet among food-insecure patients in Louisville by providing educational resources and access to affordable produce. Approximately 200 patients will be recruited from a primary care clinic, where they will be assessed for their readiness to adopt a plant-based diet using specific inventories. Participants will receive educational materials and the option to enroll in a subsidized Community Supported Agriculture program, which provides weekly boxes of fresh produce. The study will evaluate the impact of these interventions on dietary adherence and food preferences over time.
Who should consider this trial
Good fit: Ideal candidates for this study are adults aged 18 and older who are experiencing food insecurity.
Not a fit: Patients who are not food insecure or those unwilling to participate in surveys may not benefit from this study.
Why it matters
Potential benefit: If successful, this initiative could improve dietary habits and overall health outcomes for underserved populations facing food insecurity.
