What this trial studies

The GF-NOURISH program aims to improve the health of children diagnosed with celiac disease by providing nutritional education focused on naturally gluten-free foods while reducing the intake of ultra-processed gluten-free products. The study hypothesizes that this intervention will lead to better health outcomes by minimizing the risks associated with high arsenic levels found in rice-based gluten-free foods. Good fit: Ideal candidates for this study are children aged 2-18 who have recently been diagnosed with celiac disease.

Not a fit: Patients with allergies to three or more of the top eight food allergens or those with co-morbid conditions requiring dietary modifications may not benefit from this study.

Inclusion Criteria:

* Age 2-18 years of age with recent celiac disease diagnosis

Exclusion Criteria:

* Allergic to \<3 of the top 8 food allergens
* Co-morbid conditions treated with dietary modifications or that influence nail arsenic values
