We will test how different amounts and forms of potato in meals affect how much other non-starchy vegetables 18-25 year olds eat and how much they like them.

What this trial studies

This interventional tasting study exposes young adult participants to multiple plant-forward meal variations that differ in potato amount and potato form alongside non-starchy vegetables. Participants will sample the meal combinations and researchers will record how much of each vegetable is eaten and ratings of acceptability. The protocol excludes people with allergies to the study foods and those unable to complete all procedures. The work is carried out in person at the University of Kentucky using five predefined vegetable combination conditions.

Who should consider this trial

Good fit: Healthy adults aged 18-25 without allergies to the study foods who can attend in-person tasting sessions are ideal candidates.

Not a fit: People outside the 18-25 age range, those with allergies to any study foods, or those unable to complete in-person procedures are unlikely to benefit.
